The parsley comes from the Apiaceae family which include carrots, celery, dill, fennel , cumin, coriander, parsnips, etc.

The two popular types of parsley are curly parsley which has bright green curly leaves and Italian flat-leaf parsley which has a darker shade of green with smooth, flat leaves. The latter has a more fragrant and less bitter taste compared to the curly variety.

It is a highly nutritious culinary herb that is “overlooked.” It can be found as a garnish on many dishes in Western countries but is usually thrown aside and never eaten!

Nutritional properties of parsley

Parsley provides the best carotenoids in nature and has great nutritional power , contains phytonutrients and anti-cancer and anti-inflammatory flavonoids (lutein, zeaxanthin, celery, rutin and apigenin).
